These Mint Thin cookies have been around for a little while but they are definitely one of my favorites. A cup of tea and a few of these babies can make the whole world disappear for for at least 10 minutes. A tasty, mini vacation!

The Dark Mint chocolate from Make n’ Mold makes these cookies super easy because there is no guess work involved as far as adding the peppermint flavoring.

Remove the middle two tines from a plastic fork.

Toss a Ritz Cracker into the melted chocolate and toss to coat. Gently tap the cracker on the side of the bowl to remove some of the excess chocolate.

Remove from the chocolate and place on parchment paper.  Before the chocolate sets up sprinkle the tops with the crushed candy cane, or if you can find them, crushed red and green mint candies.

These are super easy to make and they can easily be packaged in all sorts of adorable ways … the most difficult part about these little guys is actually giving them away! :)
