Recipe: Corn Bread

 

 

Who doesn’t love corn bread?  It’s super easy to make and it tastes delicious…especially fresh out of the oven.  Oh yeah, and it’s pretty cheap too.

 

 

Corn Bread

 

1 Cup Yellow Corn Meal

1 Cup All-Purpose or Unbleached Flour

2-4 Tablespoons Sugar

4 Teaspoons Baking Powder

1/2 Teaspoon salt

1 Cup Milk

1 Egg

1/4 Cup Vegetable or Canola Oil

Preheat oven to 425°.  In a large bowl, combine corn meal, flour, sugar, baking powder and salt.  Whisk in between each addition. Add milk, egg and oil.  Beat with the whisk until fairly smooth, a minute or two.  Bake in greased or sprayed 8-inch square baking pan 20-23 minutes or until wooden toothpick inserted in center comes out clean.   This batch makes about 9 servings.  For the size of my family now I double it and put in a 9×13 pan.
