Quick Weeknight Meals: Chinese Chicken Salad

Quick Week Night Chicken Recipe: Chinese Chicken Salad

 

Chinese Chicken Salad

 

1 head cabbage sliced very thin

3 carrots julienned

4 Tablespoons sesame seeds

4 Tablespoons almond slivers

2 chicken breasts cooked and cut into pieces

1/4 cup canola oil

4 Tablespoons soy sauce

4 Tablespoons sugar

2 Tablespoons white vinegar

Chow Mein Noodles

 

Marinate chicken in a little soy sauce for 30 minutes or so. Brown the almonds and sesame seeds in a 400 degree oven for about 4-5 minutes. Watch them like a hawk because they burn easily.

Cook the chicken either by grilling, baking, or cutting into small pieces and sauteing until done.

Mix the first 5 ingredients in a salad bowl.

Heat the oil, soy sauce, sugar and vinegar in a sauce pan until the sugar is dissolved. Pour over the ingredients in the salad bowl and toss.

Plate and sprinkle with Chow Mein noodles.
