Crockpot 15 Bean Soup with Turkey Kielbasa

Recipe: Crockpot 15 Bean Soup with Turkey Kielbasa

 

This is one of those meals that is perfect for a busy Saturday. Start it in the morning and then go about the rest of your day knowing you’ll have a hot and healthy dinner ready in the evening. Whip up a quick batch of Corn Bread or Buttermilk Drop Biscuits and a side salad for a healthy, filling dinner.

Because this cooks so long I never have to soak the beans over night. Which works out really well because I never remember to soak the beans the night before.

 

Ingredients:

15 Bean Soup Mix (dried beans)

Celery

Carrot

Onion

Turkey Kielbasa

Canned/Diced Tomatoes

Extra Virgin Olive Oil

6-10 cups Chicken Broth

 

Sauté onions, carrot and celery in a tablespoon or two of Extra Virgin Olive Oil. Add sliced Turkey Kielbasa and continue to Sauté until vegetables are slightly soft and Kielbasa is slightly browned.

Put vegetables, rinsed and drained beans and 6 cups of chicken broth in crockpot. Using the spice packet that comes in some packages of beans is optional. I don’t usually use it because of the sodium content of such spice packages.

Add chicken broth if needed during cooking.

Cook on Low for 5 hours. Add diced tomatoes and cook 1 hour more.

    Thanks for posting this, I just bought the 15 bead soup beans. I did read somewhere that soaking the beans makes them less gassy. I wonder how different cooking them this way has with the gassiness. Thanks again for the recipe I am going to be trying this one for sure

      Hi Freebird7100, Soaking beans to reduce gas is one of those old wives tales. All it does is make the beans absorb water so they don’t have as much flavor. It also cuts down on some of the cooking time but not so much as to make it worth a less flavorful bean, in my opinion. If you gradually increase the amount of beans you eat over several weeks most people will overcome the gas problem.
      You could try a tiny pinch of baking soda with the beans. I hear that helps some.

        Thanks, I have heard both takes on the beans. I was not really sure, my Mom soaks her beans overnight for ease of cooking but recently I read somewhere that doing the soaking will take out the gassiness. Thanks for the info and I am looking forward to this recipe.

    what size bag of beans, one or two pound. and what size can of tomatoes

      Hi Fay,
      1 pound beans and then it depends on how much tomato you like. I usually add at least a 14.5 ounce can and often times I’ll add two of those.
