Recipe: Mango Salsa, Empty Nest and Every Night Date Night

 

One thing about heading into our Empty Nest years… almost every night is Date Night. Seriously. We’ve started cooking together, eating together (sometimes even by candle light) and cleaning up together. We talk about all sorts of stuff. How was your day, what do you think about this thing in the news, have you talked to this or that child today, where do you want to go this weekend, it’s broken AGAIN? You know, stuff.

We clean up and sometimes we even dance together in the kitchen.

“Hello, I remember YOU, that wonderful person I fell in love with so long ago. Nice to see you again.”

It’s been fun to try new recipes, improve on old favorites and find creative ways to use up lots of leftovers on the nights that we forget we are cooking for two and not six! :)

 

This is a recipe Warren has concocted that is so very, very good.

 

Mango Salsa

2 cups chopped, pitted and peeled mango

1 cup chopped red bell pepper

2/3 cup chopped red onion

1/4 cup fresh cilantro, chopped

2 Tablespoons fresh lime juice

4 teaspoons olive oil

3/4 to 1 teaspoon cayenne pepper – or to taste

 

Put it all in a bowl and gently toss.

Great on grilled salmon (above) or chicken. We were even talking about using in tacos or fajitas. YUM!

    Vickie~ I LOVE this. My hubby & I will be empty nesters in a couple years and we were talking although we’ll miss the kids~ how nice it would be just to be the 2 of us~ like we were dating again :-D

      It is a big adjustment but there are lots of good things that come with the empty nest. When we got married we instantly had four kids so this is nice. :)
