Recipe: Mashed Sweet Potatoes

 

Here is a recipe I have been working on.  It is Fall inspired, healthy and I think you’ll like it!
Mashed Sweet Potatoes
2 pounds sweet potatoes

1/2 cup orange juice (plus a tad more if needed)

2 Tablespoons reduced-fat sour cream

1 teaspoons brown sugar

1/4 teaspoon grated nutmeg

Salt and freshly ground black pepper to taste

Peel sweet potatoes and cut them into 2 or 3 inch chunks.  Cover completely and boil in lightly salted water until they are tender.  About 15-20 minutes after water starts to boil.  Drain and return to saucepan, add 1/2 orange juice, sour cream, brown sugar and nutmeg.  Mash with a potato masher, adding more juice if necessary making a textured potato dish.  In other words… don’t mash them too smooth. Salt and pepper to taste.
