Zucchini Nut Bread

Our neighbors gave us zucchini… YUM!

Zucchini Nut Bread

3 eggs (beaten)

2 cups sugar

1 cup oil

3 teaspoons cinnamon

2 cups shredded zucchini

1 teaspoon vanilla

1/2 cup nuts (I use walnuts)

3 cups flour

1 teaspoon baking soda

1 teaspoon salt

1/4 teaspoon baking powder

Beat eggs, sugar and vanilla.  Sift dry ingredients and add alternatly with zucchini and nuts.  Bake at 350° for 60-70 minutes in a greased and floured loaf pan.  Makes two loaves.
